Aricha Anaerobic NaturalOrganically grown under the shade of banana trees on a 2. 5ha farm at 2100masl in Yirgacheffe, this Ethiopian heirloom lot was processed by Girma Tamiru in Aricha using a non conventional anaerobic natural process. To enhance the intense, juicy flavours Ethiopian coffee is known for, cherries are anaerobically fermented in plastic barrels for 9 days and sun dried on raised beds for 13 18 days. Theyre then stabilised on site before travelling to Gerji

The cherries are selectively picked and sorted

to expand their capacity

Fazenda Angola is a small 6ha coffee farm situated at 1200masl in Illicínea

resulting in unique and intriguing coffees

This semi-washed process from the El Diviso farm begins with a floating process to select only the fully ripe cherries

or to achieve a desired flavour profile

The coffee is then taken to raised African beds and slowly dried at 32ºC until the moisture reaches below 11%

Micro-lots were assembled by combining day-lots (coffee processed on the same day) with similar taste profiles

The Coffee Gardens was established in 2017 with the goal of ethically producing specialty coffee

typica and kartika using dried grass
